1 cup of butter softened
1 cup of firmly packed brown sugar
1 cup granulated sugar
1 egg
Dry Ingredients
2 cups of flour
1 cup quick oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon of salt
1 cup Libby’s solid pack pumpkin
1 cup semi sweet chocolate chips
1 cup of craisins
½ cup chopped pecans (optional)
Preheat oven to 350°
Combine dry ingredients
In a separate bowl cream the butter; gradually add sugars continue mixing with mixer until light a fluffy
Add egg and vanilla, mix well
Alternate dry ingredients and pumpkin, mixing well after each addition
Stir in chocolate chips, craisins and pecan nuts
For each cookie, drop ¼ cup dough onto lightly greased cookie sheet
Spread into round shape
Bake for 20-25 minutes or until the cookies are firm and
lightly browned
NOTE: Make a double batch, you’ll have extra pumpkin and they are a great treat to give away this time of year.
