Berry Mixture:
1 ½ cup blueberries, fresh or frozen
1 ½ cup raspberries, fresh or frozen
1 ½ tablespoon lemon juice
Batter:
¾ cup granulated sugar
3 tablespoons butter, softened
1 teaspoon baking powder
¼ teaspoon salt
1 cup all purpose flour
½ cup milk
Topping:
½ cup sugar
½ teaspoon salt
1 tablespoon cornstarch
1 cup boiling water
Directions
Preheat oven to 400°
Mix berries and lemon juice together in an 8” x8” square baking pan.
Cream together butter and ¾ cup sugar, then add baking powder, salt and flour.
Add milk and stir to form the batter.
Place batter by spoonfuls on top of the berries mixture, being careful not to mix.
For the topping mix sugar, salt and cornstarch together and sprinkle mixture on top of the batter and berries.
Pour 1 cup of boiling water over the entire contents being careful not to mix.
Bake for 40-45 minutes or until lightly browned.
Serve warm or chilled with ice cream making a super yummy summer dessert!
