My friend Marci makes these yummy burritos. For years I’ve had plans to make a batch for the freezer but I just never seem to get around to it, until last month when our husbands went hunting together and Jesse came back raving about the burritos. It’s a simple and handy recipe that you can tailor to your liking.

Burrito making ingredients
12 eggs-scrambled to your preference
Hash browns-cooked, I used about 4 cups
Beans- 1 can of pinto beans, rinsed and drained
Sausage-cooked or bacon would be yummy too. I had some breakfast sausage plus a partial package of buffalo burger that I mixed up for this batch.
Cheese-Shredded use plenty it will help keep the burrito moist along with the salsa
Salsa-Pace “hot” was my choice
Tortilla
This recipe made 12 burritos – next time I am going to go all out and just make a bunch of them.

Burrito assembly line
Assemble all of the ingredients onto your burrito and wrap up, then wrap a paper towel around them and put into a plastic zip lock bag for the freezer. To eat a burrito heat it up in the microwave for approximately 3 minutes depending on your wattage, wrap in foil heat on fire or grill then enjoy.

Note: Nate says it’s key to wrap the burrito in a paper towel, it makes it easy to throw in the microwave while keeping them from sticking together in the freezer AND you can use it for T.P. in emergency situations!
